An oilstat is a thermostat which controls the flow of oil through an oil cooler.
Oil does not lubricate efficiently when it is too cold, so an oil cooler should avoid over-cooling. An oilstat (above) only opens when the oil is hot, ensuring that oil does not flow through the oil cooler matrix until cooling is necessary.
